Last night's cookie party

Thanks, everyone who could drop by last night for cookies. We made four different kinds: butterscotch oatmeal, pumpkin ginger, chocolate chip, and orange white chocolate chip. I think the chocolate and orange cookies turned out best. The pumpkin with ginger bits were an experiment and need more work (and salt). Here are the recipes for the pumpkin and orange cookies as I remembered them. The butterscotch oatmeal were the Nestle recipe and the chocolate chip were my usual mixture.

Orange cookies

1 Tbsp butter
3 oz apple sauce
1 egg
1 tsp vanilla extract
2 tsp orange extract
3 Tbsp blood orange marmalade
1/2 tsp salt
12 oz. white chocolate chips (shoulda used a bit less, maybe 9-10oz)
2 1/4 c. flour

Note: I used _no_ baking soda in these cookies. I usually use 1/2 tsp baking soda in my cookies that follow this rough recipe and I think that's too much (they turn out too caky). Next time, I'll try 1/4 tsp baking soda.

Bake for 10m at 375F. I used the middle oven rack but one nearer the top would have been better to make the tops more crispy.

Pumpkin ginger cookies

8 oz. pumpkin
3/4 c white sugar
1/2 c brown sugar
1 Tbsp butter
3 oz. apple sauce
2 eggs
2 tsp ground cinnamon
1 tsp vanilla
1 Tbsp maple syrup
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 c. chopped candied ginger
2 c. flour
1/4 tsp baking soda

Bake for 9m at 375F. These turned out really caky and they needed more salt.
