In place of a stick of butter I used a tablespoon of canola oil and 4 oz. of apple sauce. In place of the egg I used something by ener-g made of potato starch and tapioca flour. You mix about a tablespoon or so of the powder with a tablespoon of water and you get an approximate egg. The Web told me that soy flour and water would have also worked. Maybe next time.
Anyway, it was a big hit, much better than I thought. So I'm happy. And I have a vegan cookie recipe now. 8) [BTW, if anyone really wants the complete recipe, just reply and I'll spend the extra 10 minutes to write it up.]
