Vegan cookies

I went to a party at a co-workers house today, who told everyone that it was a vegetarian house. I wanted to make cookies but I didn't know if eggs would be disallowed by his particular practice of vegetarianism. So I just aimed for vegan chocolate chip cookies; that's got to work. Turns out, the cookies were a big hit, much to my surprise. They got smooshed on the bike ride over, but they were much better after they'd cooled for an hour or so (I was baking up to the very last minute -- the oven was still hot as I left).

In place of a stick of butter I used a tablespoon of canola oil and 4 oz. of apple sauce. In place of the egg I used something by ener-g made of potato starch and tapioca flour. You mix about a tablespoon or so of the powder with a tablespoon of water and you get an approximate egg. The Web told me that soy flour and water would have also worked. Maybe next time.

Anyway, it was a big hit, much better than I thought. So I'm happy. And I have a vegan cookie recipe now. 8) [BTW, if anyone really wants the complete recipe, just reply and I'll spend the extra 10 minutes to write it up.]
